Zucchini Blossom Fritters
Freshly plucked from my kitchen garden….Mmmm so delicious!
Pick fresh zucchini flowers, wash inside out.
Tear gently from one side and remove inside stamen.
Layer 1 zucchini flower into another to make a double layered flower.
Fill each double layered flower with 1/2 tsp crumbled goat cheese and a finely chopped olive..
and fold petals to close tightly around filling.
Roll stuffed flower in seasoned flour.
Dip into egg wash.
Roll once again in seasoned flour.
Shallow fry in medium hot oil, till crisp from all sides.
Sprinkle with crumbled parmesan cheese and serve immediately!
