Accompanied with crunchy Peanut Raita!
For the 7-Grain Couscous Blend…
Heat oil, add rai, karipatta, khadi lal mirch, chana dal, udad dal and roast for a minute. Add minced ginger and green chillies and cook for another minute. Next add 1 cup 7-grain couscous blend (I used Trader Joes) and 1 1/2 times hot water and salt to taste. Cover and simmer for 10 minutes. Rest for 10 minutes. Sprinkle with lemon juice and garnish with freshly chopped dhania….enjoy!
For the Peanut Raita
Dry roast peanuts and coarsely pound. Heat a few drops of oil. Add salt, rai, karipatta & the peanuts. Cook for 30 seconds. Add to blended yoghurt….ready!
