Warning….not for the faint hearted, they pack a hefty punch!!
Wash potatoes, scrubbing outer peel well to remove all grit.
Cut into thick roundels. Sprinkle liberally with salt, sprinkle with a little water and microwave covered till tender…about 6-7 minutes.
Add coarsely pounded dhania seeds,saunf and red chilies. Also sprinkle some amchoor and garam masala. Toss in a tsp of ginger-garlic paste and a generous drizzle of oil. Allow to marinate for a couple of hours.
Heat a little oil in a pan, add the marinated alu, and cook on medium heat, stirring intermittently so the masala on the alu does not burn. Increase heat to high in the last couple of minutes of cooking, tossing frequently till the pieces of alu become nice n crisp. Serve hot as appetizer or as a side with dal-chawal-roti.
