Alu Lettuce ki Bhaji

imageWarm lettuce stir fried quickly with some crispy potatoes and a hint of spice!
A little out of the box, but boy it sure is yummm!

Method:
Dice one large potato into a small cubes
Finely chop 1/2 inch ginger and 2-3 green chillies.

Separate leaves of a big head of red leaf/green leaf lettuce and rinse away grit.

Finely shred it to have about 5 cups of lettuce.

Heat oil, add the potatoes and cook on medium heat till lightly golden and cooked through. Keep aside.

Heat some more oil, add 1/2 tsp ajwain.

Follow with ginger and green chillies and cook for a minute. Add the potatoes and season lightly with salt.

Now add the lettuce

along with a little more salt and 1/2 tsp red chilli pwdr.

Cook on very high heat for just 2-3 minutes. Cook just enough to reduce juices slightly. Ideally there should still be some crunch left in the lettuce, when you take it off the heat.

Serve immediately with warm rotis!
