Alu for Masala Dosas

Spicy onion flavored potatoes that are light and fluffy in texture. They are used as stuffing for Masala Dosas or can even be eaten as a side accompaniment with plain Dosas!

Method:
Heat oil, add a tsp of mustard seeds, when they splutter add a tsp each of Chana dal and udad dal and cook till they turn light golden. Add a couple of whole red chillies, 4-5 Kari patta and 2-3 sliced green chillies and cook for a few seconds. Follow with 1 medium onion sliced thin.

Cook till they acquire slight color. Add 1 tsp haldi and cook for a minute.

Now add a little water (about 1/2 cup) and salt to taste and bring to boil.

Add chopped and roughly mashed boiled and peeled potatoes (about 3-4) to the simmering onions.

Cook till all the water is incorporated into the potatoes, imparting a light fluffy texture to the potatoes!
