Simple flavorful wholesome, made using fresh greens from our kitchen.
For the Arugula Pesto
2 cups Arugula tightly packed
1/2 cup pine nuts
1/4 cup parmesan cheese
2 cloves of garlic
Generous drizzle of olive oil
Blend the above ingredients onto a smooth paste.
For the Pasta
Boil your fav pasta according to package directions along with salt and a drizzle of oil. Drain.
Add the Arugula Pesto the cooked pasta along with some cream…
and simmer till sauce thickens to coat pasta nicely. Adjust salt as needed
PS: the amount of cream and pesto added will vary according to individual taste. Adding more pesto let’s you enjoy the unique peppery taste of Arugula. For kids, I add more cream, to make the sauce milder.
