BBQ Cedar Plank Salmon with Tangy Orange Glaze

Moist, buttery, melt in the mouth fish with subtle smoky undertones! This is by far the best Salmon I’ve ever eaten…an absolute must try!

Method:
Soak a food grade cedar plank in water for 2-3 hours. Procure a big piece of salmon of about 1 1/2 pounds. Carefully remove skin. Sprinkle fish liberally with salt and freshly cracked black pepper.
Heat BBQ at medium high and heat plank for 4-5 mintes till it begins to blacken. Flip plank, spray with oil and place Salmon with the skin side down. Tuck any thin edges in to have a uniformly thick block of fish. Brush liberally with the Orange glaze, taking care to spread evenly. Close BBQ and cook on medium heat (400F in the oven) for 15 minutes. Then crank up the heat for the last 5 minutes (450F in the oven). Transfer plank to a heatproof surface. Garnish with some Fennel leaves. Rest the fish for 5 minutes, serve warm with Brown Rice.

For the Orange glaze…
Ingredients:

1 1/2 tbsp marmalade
1 1/2 tbsp mustard
1 tbsp soy sauce
1/4 cup wine
1/2 a jalapeño minced
2-3 cloves garlic minced
Heat a tsp of butter, cook garlic and jalapeño till soft. Add wine, mustard, marmalade and soy sauce. Cook for about 15 minutes on medium flame till it reduces to a thick glaze.
