A delicious herb sandwich that celebrates classic Italian ingredients…. Fresh Basil Pesto, sweet ripe tomatoes and rich melting cheese! Pair it with a bowl of hot Minestrone Soup….and you have yourself a complete meal!
Method:
You will need…
Good crusty bread slices
Sliced tomatoes
Some Basil pesto and cheese to your liking. You can use mozzarella/goat cheese/feta …your pick! Spread a generous layer of basil pesto over bread.
Top with sliced tomatoes. Sprinkle some cheese, along with a light sprinkle of salt n pepper. If you like, you can also use some crushed red pepper (like I do)
Top with another slice with basil pesto spread on it and grill or toast on hot pan, using a light spray of oil….till golden on both sides…
And the cheese hot n melting….Enjoy! 🙂
