Healthy Broccoli Soup

Velvety Smooth Broccoli Soup!
Rich creamy indulgent soup made using not a drop of butter, cream or cheese….isn’t that wonderful!!

Here’s the much awaited recipe…
Method:
Slice 3-4 small shallots (or 1 medium size white onion)
Chop 3-4 cloves of garlic.
Heat a tbsp of oil and cook onion and garlic till they accquire a light color.

Add 3 cups broccoli cut into pieces.
If using frozen, use as is.

Cook for 4-5 minutes till heated through.

Transfer vegetables to blender.
Add 4 cups chicken/veg stock. I prefer to use the lighter colored broth as it results in better color of the final soup.

Process in blender till really smooth. If required, strain afterwards. Vitamix users need not bother about straining!

Add a cup of full fat milk and mix.

Transfer back to pan, add salt n pepper to taste and simmer for 3-4 min.

Serve steaming hot with hot buttered toast yum yum!! πŸ™‚
