Eggless Sugar-free Multi-grain Date Cake

My interpretation of Anagha Godbole’s recipe

Ingredients:
15 large dates chopped and soaked overnight in about 5 tbsp rum/water (about 200 gms when seeds removed)
3-4 dates chopped
1 cup milk
1 cup flour(1/2 multigrain flour/atta & 1/2 unbleached flour/maida)
1/2 cup oil
1 tsp baking soda
1/2 tsp baking pwdr
1-2 tbsp walnuts coarsely pounded

Method:
Blend the soaked dates with 1 cup milk in a blender/mixi to a smooth paste. Slowly drizzle in oil with the blender still running till all the oil is incorporated.
Sieve the flours, baking pwdr and baking soda. Add the flour one table spoon at a time to the date paste and mix slowly. Finally add the nuts and the chopped dates. If you find the batter a little too thick, you can add a couple of tbsp of milk to loosen it. The amount of extra milk needed (if any) will also vary, depending on the quality of your dates.
Preheat the oven at 350F. Bake the cake in a greased oven dish for about 40 min.
Note: I sprinkled the top of the cake with a tsp of brown sugar as a pretty topping!
PS: This cake tastes even better the next day…. The flavors mature, making it more delicious, sweet & moist!

  1. Hi. Ruchi, incase I donot have multi gain flour and unbleached flour., do we wheat or maida instead of the ones you mentioned?

    Can this be made entirely with atta?
    And are adding the dry ingredients to the blender or mixing it using spatula?
