Gobhi…different strokes!

Method:
Cut gobhi into medium size pieces. Heat oil, add jeera, sliced ginger, chopped green chillies, gobhi, salt and haldi. Stir fry on medium high….till it is nicely seared and acquires a golden brown color. Add red chili pdr, dhania pwdr, garam masala and amchoor. Sauté for another 4-5 minutes. now cover and cook till it’s slightly tender… But still has a slight bite!
PS: you can make Alu Gobhi using the same recipe as above, just add diced microwaved/boiled potatoes to the mix!

Gobhi Mussalam….made in a kadhai…..with an achari twist!

Method:
Heat oil, add jeera, ginger-garlic paste and minced green chillies and sauté till golden. Add minced onion and carmalize. Add tomatoes and simmer for a few minutes, adding salt, haldi, dhaina pwdr, Garam masala. Add the gobhi (select a small size and cut off the thick stem portion at the bottom so it can sit easily) and bhuno on slow flame. Cook covered rotating gobhi intermittently, rubbing the masala all over it with a spatula till done. Remove gobhi onto a platter. Add boiled peas to the leftover masala in the pan. Cook for 2-3 minutes and spread around gobhi.
Note : for an achaari twist you cam sprinkle aam ke achaar ka masala (powder form) on the gobhi too!

Method:
Select small size gobhi, cut it flat from the bottom…taking care to keep it intact in one piece and shallow fry on all sides in a Kadhai…using tongs to turn. Make a really spicy onion tomato masala using ginger, garlic and spices of your choice as mentioned in the previous recipe. Cover gobhi liberally with this masala. Bake in a 400 degree oven till done! You can sprinkle some paneer and chopped dhania as garnish!

Stuffed tomatoes
Method:
Hollow tomatoes out….removing most of the pulp. Make really spicy peas, potato and onion filling….similar to that of samosa filling…by bhunoing the filling. Fill inside tomato shells and bake in a 400 degree oven till done. Sprinkle with chopped dhania and paneer as garnish
Alternative filling… You can also fill with spicy paneer bhurji made by stir frying onions, tomatoes, paneer and spices!
