Dosas Galore: Plain, Brown Rice, Quinoa, Dalia, Ragi!

Who can resist the temptation of a Golden Crispy Dosa. A universal fav among kids and adults alike, it’s one dish that is welcome any time of the day!

So how about getting this delicious crunchiness to your dining table! You can enjoy them plan, fill them with the classic alu filling or make fun kid friendly Paneer/cheese Dosizzas! 🙂

For the health conscious you can even try making one of my alternate dosa batters like Brown Rice Dosa, Quinoa Dosa, Dalia Dosa and Ragi Dosa. They are so popular in our house, that we rarely feel the need to make regular white rice Dosas! 🙂

Method:
Wash & soak overnight 1 cup udad dal, with 3 cups white rice, 1/4 cup Chana dal, 1/4 moong dal and 1 tsp methi dana.

Next morning, drain water and grind to a thick paste. Add salt to taste and mix. Cover and leave to ferment overnight.
Next day your dosa batter is ready for use.
Heat a non-stick pan on medium high. Drizzle a little oil. Cut half an onion and clean pan with the onion. Once the pan becomes hot, clean with an extra wet towel so that the upper surface is not excessively hot or oily. Put 2-3 spoonfuls of batter and spread batter thinly in concentric circles. Do not rush, since you have cooled the upper surface with wet towel…you will have enough time to spread the batter thinly.

Drizzle with a little oil/butter/ghee.

Continue to cook on medium high till the bottom becomes a deep golden gently lift sides, roll into a cylinder and serve.

If you like Masala Dosa, place a layer of Alu ki Sabzi in the middle and then fold.

PS: Addition of Moong dal & Chana dal help give beautiful golden color to your dosa and methi dana help make them crisp!
