Healthy Flour-less Oats Pancakes!

Protein packed Flour-less Oats Pancake that are an absolute treat for the kids! Try making them your whole family will love them!

For 4 (3 inch) pancakes you need:
1 cup old fashioned oats (the quick cooking kind)
2 eggs
1/2 cup cottage cheese
1 tsp vanilla extract
1/2 cup blueberries or any fruit of your choice
3 tbsp milk
1/3 tsp eno

Combine the above ingredients in a blender until you get a really smooth paste. Add milk and eno and mix gently.
Stir in blueberries or your fav fruit. Coat a non stick pan with some oil and spoon about 2 tbsp of the batter per pancake.
Cook for about 3 min. and serve with maple syrup!

PS: if you decide to use paneer instead of store bought cottage cheese….please add a little more milk to the recipe to adjust the consistancy of the batter!

Try making mini pancakes, top them with chocolate chips and a drizzle of chocolate sauce….kids find them fun! I use my mini uttapam pan to make these…

    Hey Ruchi, just finished eating these lip smacking, finger licking (and plate licking) healthy pancakes!! They were awesome!! I just made couple of small changes – used one egg and replaced other with 1/2 yoghurt, and added a bit of maple syrup to the batter just to give it a bit of sweetness. I do not like if pancakes have smell of egg in it 🙁 next time will replace both eggs with yoghurt n see how that goes. I also used paneer instead of cottage cheese per se.

    If I don’t have cottage cheese or paneer handy then skipping them will give same result.
