Healthy Spinach Soup

A must try for all spinach lovers….this delicious soup packs in a whole lot of greens and is super easy to make! 🙂
4 cups vegetable stock ( made with 2 onions and 2 potatoes) or u can also use ready made veg/chicken stock
2 big bunches of spinach
1 tbsp butter
1 onion and 2-3 cloves of garlic chopped finely
11/2 cup milk
1 tbsp cornflour
some fresh cream for garnish

Cut vegetables into big pieces and pressure cook. Strain water and discard vegetables. Alternaively you can use store bought vegetable stock/chicken stock. Wash, drain and blanch spinach. Heat butter, add chopped garlic and onions and saute till soft. Add spinach and cook for 5 minutes. Now puree this mix along with the vegetable stock/chicken stock and one small green chili (optional). Add salt, pepper and a pinch of nutmeg and bring to boil. Blend cornflour in milk and add to the soup. Simmer for another 5 minutes. Serve hot garnished with a swirl of cream!
