Healthy Spinach Soup

Who can resist a cup of steaming hot spinach soup…

A must try for all spinach lovers….this delicious soup packs in a whole lot of greens and is super easy to make! 🙂

Ingredients:
4 cups vegetable stock ( made with 2 onions and 2 potatoes) or u can also use ready made veg/chicken stock
2 big bunches of spinach
1 tbsp butter
1 onion and 2-3 cloves of garlic chopped finely
11/2 cup milk
1 tbsp cornflour
some fresh cream for garnish

Method:

Cut vegetables into big pieces and pressure cook. Strain water and discard vegetables. Alternaively you can use store bought vegetable stock/chicken stock.

Next, wash and drain spinach.

Blanch spinach by cooking in hot water for 3 minutes and then immerse in cold water. Strain away water.

Heat butter, add chopped garlic and onions and saute till soft.

Add spinach and cook for another 3 minutes.

Now transfer this mix to blender.

Puree this mix along with the vegetable stock/chicken stock and one small green chili (optional).

Blend into a smooth puree and transfer to a heavy bottomed pan.

Add salt, pepper  (if you gave white pepper, that tastes even better!) and a pinch of nutmeg and bring to boil. Blend cornflour in milk…

and add to the soup.

Simmer for another 5 minutes.

Serve hot garnished with a swirl of cream!

  1. Hi Ruchi, you could add tomatoes and carrot too. Maybe replace carrot with pumpkin?
