My mom-in-law’s special… Karare Saunfia Karele!
Scrape karelas lightly and reserve scrapings. Slit them open on one side and rub salt on them inside out. Put some salt on scrapings too. Leave covered for a few hours. Rinse karela and scrapings to remove excess salt. Steam karelas lighly in pressure cooker (just for 1 whistle). Alternatively you can cook them in the microwave for 3-4 minutes. Remove steam and open cooker quickly! Heat oil, saute karela scrapings along with minced onion till light brown. Add red chilli powder, salt, dhania pwdr, lots of coarsely ground suanf, garam masala and amchur. Roast till its golden brown. Fill karelas with the mix. Shallow fry in a pan in mustard oil (optional) and serve with garma garam Dal-Roti!
