Mango Pineapple Iced Tea

imageWith the temperatures warming up, we all can do with a tall glass of refreshing pick-me-up Iced tea!
This tropical version of iced tea made with home brewed tea and fresh fruit purée will especially delight!
Add a shot of rum and…Mmmm you’re in paradise!

You will need:
1/2 cup fresh ripe mango purée and 1/2 cup fresh ripe pineapple puree

3/4 to 1 cup of sugar (as you like)

4 cups of tea decoction, cooled

1 cup ice

Juice of 1 lemon

1 thinly sliced lime and a tbsp of finely chopped semi-ripe mango as garnish.

Method:
Pour the tea decoction in a large jug. Add the mango and pineapple purée, sugar and lemon juice. Stir to combine.
Strain to remove any pulp from the puréed fruit.
Add the ice, the sliced lime and the finely chopped semi-ripe mango. Refrigerate for a couple of hours to let flavors infuse…serve absolutely chilled!

To make the tea decoction…
Bring 4 cups of water to a rolling boil. Add 4 tsp of tea, cover and take off heat. Let tea infuse for 5 minutes. Strain and keep aside to cool.
PS: when the fruits are not in season use frozen or canned.
