Healthy wholesome and delicious, this sandwich paste has been with us since our school days. As it uses a whole lot of veggies its a great option to increase veggies in your kid’s diet!

We love to use them for picnics and summer outings, where they are always a huge hit with kids and adults alike!

To make the Pink Sandwich paste, you will need:

1 large tomato

1/4 cup butter

1/2 cup cheese

1/4 cup each of minced capsicum/bellpepper, carrots and cabbage and one minced chilli if you like.

Salt n pepper to taste.

Method:

Boil/microwave tomato to cook and loosen peel. Remove peel and cool.

Blend tomato, cheese and butter in mixi till smooth.

Mix in the minced vegetables.

Add salt n pepper to taste.

PS: If you like you can use cream cheese instead of grated cheese…works wonderfully.

Spread liberally on sliced bread

and make sandwiches!

Note: if you are going on a picnic or journey. You can take this paste in a chilled bottle/container along with a loaf of sliced bread. When its time to eat…apply on bread and make fresh sandwiches!
