Paneer Scallion Fried Rice

A quick one-pot meal which combines a good serving of protein, complex carbs (when you make it with brown rice) and greens!
A delicious kid friendly meal, great for rushed weeknights, when you need a no-fuss one dish dinner that will appeal to the entire family! You can use either brown rice or white to make this…tastes equally yummmm!

Method:
Wash, drain and cook rice with some salt and a tsp of oil, fluff with fork and keep aside. Mince ginger and garlic and Slice the scallion/green onions thin. Cut Paneer into thin small pieces.
Heat oil to scorching hot. Quickly add the ginger garlic, followed by the thinly sliced scallion. Cook for about 1-2 minutes. Add the paneer and toss. Cook for another 2 minutes till paneer acquires slight color. Also add salt to season paneer. Finally add the cooked rice along with light soy sauce, dark soy sauce, vinegar and chilli sauce. Garnish with some chopped green scallion…serve immediately!

Note:
If you are making Paneer Scallion Brown Rice….follow process to cook plain Brown Rice. Then the rest of the recipe remains the same!

  1. Can I used regular onions instead of scallion/green onions?

    • Nisha, regular red onions compared to scallions are sweeter. Not only do scallions add crunchy texture but also little bit tanginess too. I always use scallions.
