Potato Crisps with Chive-Sour Cream Dip!

For those days…when you want to throw caution to the winds….and just INDULGE!

Wash and drain potatoes to remove all grit. Now shave thick long outside peels by applying pressure on the peeler while peeling. Fry these in oil for about 3 minutes…drain on paper and sprinkle immediately with salt, pepper and crushed red pepper (optional). Next preheat oven to 360 degrees. Arrange crisps on a baking sheet. Sprinkle lightly with grated Parmesan cheese and bake for 3-4 minutes till cheese melts. Let the crisps cool & serve with sour cream + chives dip!
