Quick Low-fat Mexican Salad

imageimageA delicious salad with robust Mexican flavors that eats like a meal.

It uses my homemade low-fat zesty Mexican dressing….so you don’t end up eating a whole lot of calories found in store bought brands!

You can put this salad together in minutes….and can vary the ingredients as per the ingredients available in your pantry!

Method:
Cut romain lettuce into thin ribbons and prepare a bed with it in your salad bowl.

Sprinkle liberally with red beans (I used canned washed and drained) and corn (I used frozen, defrosted)

Top with chopped red onions and bell peppers (I used red & green)

Follow with another liberal layer of red beans and corn

Top with diced tomatoes followed by sliced avocado. Sprinkle with a good squeeze of lime to prevent the avocado from browning.

Now drizzle the zesty homemade Mexican dressing on top and toss to combine all the layers.

Last but not the least…sprinkle with a tbsp of grated jalapeño jack cheese/cheddar cheese.

Serve immediately!

For the low-fat Zesty Mexican Dressing…
1 tbsp Olive oil
2 tbsp red wine vinegar
Juice of 1/2 lemon
1/4 tsp cumin pwdr
1/4 tsp coriander pwdr
1/4 tsp paprika/red chili pwdr
Salt to taste
2 tsp Sugar (optional)

Whisk together above ingredients to combine into a thick tangy dressing. Store in refrigerator. Use as needed.
