Shrimp Scampi…Butter, lemon juice, parsley and wine sing together in harmony in this Italian classic!
Toss shrimp with salt, pepper and a pinch of sugar. Heat oil in pan to scorching hot. Sear shrimp for 2 minutes. Keep aside covered with some foil. Next heat some more oil in the same pan, add minced garlic and cook till just soft. Now take off from heat, pour a slosh of wine, a generous squeeze of lime, whisk in some butter & throw in some chopped parsley. Adjust salt and add a pinch of cayenne. Cook for a couple of minutes & then add the shrimp and cook till heated through….ready! Serve with warm toasted bread as an appetizer or as an entree, on a bed of linguini/fettucini!
