imageimageFalafel…a middle eastern fav, that packs in the protein rich goodness of chickpeas. Till now, I’ve never been a huge fan, as I found them too dry with a tasteless powdery center that to my taste buds resembled something like saw dust!
But recently I was introduced to this fabulous idea of using a combination of boiled n raw chickpeas that clearly solved the problem.
The raw chickpeas in the recipe, ensured an ultra crisp exterior without the need for any binding agents. While the cooked chickpeas, made the center slightly moist…letting you enjoy their natural sweet creamy flavor!

Method:
You will need….
1 cup chickpeas soaked in water for 10-12 hours.
1 cup boiled chickpeas
1/2 tsp coriander seeds dry roasted and coarsely ground
1/2 tsp cumin dry roasted and coarsely ground
2 whole red chillies dry roasted and coarsely ground
1 small onion finely chopped
2 cloves of garlic minced
Salt n lemon juice to taste.
Grind the soaked raw chickpeas in a chopper using absolutely no water (not a blender, as you want it to be slightly dry and grainy)
Grind the boiled n drained chickpeas in a chopper using absolutely no water.
Mix the 2 types of ground chickpeas, with the onions, garlic and spices. Add salt n lemon juice to taste and also add a tbsp of chopped parsley/dhania to the mix.

Form into a smooth ball, do not overwork the mix, or it tends to become too dense.

Divide into small flat balls.

Deep fry in medium hot oil. Drain on paper towel.

Serve warm with a drizzle of tangy Yoghurt Tahini Sauce on a bed of salad or stuff into Pitas to make a complete meal!

    Have you tried freezing these falafels for later use? Do they freeze & defrost well?
