SPICY SHRIMP FRA DIAVOLO

imageimageFriends, how about something really special for the weekend, I present,
The Completely Off the Charts…..SHRIMP FRA DIAVOLO!!
My daughters absolute favorite pasta dish, she would have me make it every week, if she could! 🙂

Method:
Sprinkle salt and crushed red pepper on the shrimp. Heat oil and sear shrimp on one side.

Flip shrimp….sprinkle with cognac and using a long match set fire.

Cook till flames subside, remove from pan and keep covered

Now return pan to low heat, add oil and a lot of minced garlic ( I used 12 cloves) and slowly brown…till it is golden. Takes about 10 minutes. Now add tomatoes, salt, sugar, crushed red pepper and about a cup of white wine & cook to reduce…..about 8 minutes. Now add the shrimp and chopped parsley & cook for another 2 minutes. Toss in eldente cooked linguini, slide onto platter, sprinkle with parsley, crushed red pepper & some freshly ground black pepper…….Enjoy!
