Can Hummus get any healthier…it just did, with SPINACH HUMMUS!!
Pretty to look at, Delicious to eat and with a hefty serving of greens!!
Soak 1/2 cup chickpeas overnight. Next day pressure cook with salt until soft. Process in a blender along with 2 cloves of garlic and about 2 bunches of fresh baby spinach. Mix in 2 tbsp tahini and a squeeze of lemon juice. Adjust salt to taste. Pour out onto serving dish, make grooves with a fork, top with some extra virgin olive oil. Serve with warm grilled Pita Bread!
