Healthy Spinach Tikkis that pack a healthy punch!

When Ruchi recently posted the Aloo Palak Tikkis, I couldn’t stop thinking about these. I was running a portion control and light eating week and it absolutely fitted the bill. I was slightly apprehensive since the recipe used a lot of spinach and thought, would it be bitter? Nevertheless, knowing Ruchi’s capacity of work in the area, I barged in and followed the recipe to “T”.
The only thing I had to substitute was, using frozen spinach as compared to the fresh spinach as recommended in the recipe. But it worked wonderfully too. Just thawed the spinach and mushed it with potatoes and all the mentioned spices of amchur, garam masala, coriander powder, red chili powder and salt. The result was these gorgeous Tikkis which I pan fried as per the recipe. I served these Tikkis for the dinner to my family along with some oil free kale chane ki chaat and cilantro mint chutney. Just awesome!
