Stem Ginger Syrup

Ginger…our house is big on it! It is an indispensable part of our every day food….So when I come across this delicious stem ginger syrup that helps add fresh ginger taste to desserts and cocktails, it makes me jump up with glee…when health and flavor combine…it’s a win-win for me!
PS: Helps me feel a little less guilty about indulging my sweet tooth too! 😉

Method:
Take 1 1/2 cup water, 1/2 cup sliced ginger (I used a vegetable peeler). Cook till it reaches a boil. Drain water and reserve (this water can be used to make other delicious drinks). Repeat this process two more times each time bringing fresh water to boil and then draining it out of the ginger. Reserve the 4 1/2 cup ginger water for other use (try making ginger herb tea with the reserved water)
Now to the remaining drained ginger, add 1/2 cup sugar and 1 cup water. Cook on medium flame till it becomes a thick glossy syrup.
Store in an air tight container and use to jazz up cocktails, ice-creams, cakes, cookies, jams and preserves!
