Tangy Sriracha Mango Stir-fry!

imageimageSweet Sour Spicy…this Stir fry is like a party to your taste buds! The slightly raw tangy mango that forms the base flavor of this unusual dish pairs wonderfully well with the hot Thai Sriracha sauce! An absolute treat to the senses! 🙂

Method:
Peel and dice one slightly raw mango, one which is very firm and a yellowish orange in color.
Also Dice/slice some of your fav vegetables….I used broccoli, mushrooms, carrots, peppers and sugar snap peas.

Heat some oil and add sliced garlic, grated ginger and diced onion. Cook on high heat for a minute.

Add broccoli and cook on medium high for 1 minute.

Now add the carrots and mango and cook on high heat for a minute.

Follow with mushrooms, peppers and sugar snap peas in that order.

Add a tbsp of dark soy sauce, a tsp of vinegar and a tsp of hot Sriracha Thai sauce to the mix.

Cook on high heat to reduce juices and concentrate flavors….serve immediately!

My choice of accompaniment with this would be steaming hot brown rice/white rice! 🙂
PS: I did not add salt as I did not feel the need.
You can add tofu/shrimp/fish/ chicken to this Stirfry if you like!
