Tropical Mango Pineapple Salsa

Method:
Preparation…
Peel and dice 3-4 large ripe yet firm mangoes.

Peel and chop 2 ripe yet firm pineapples into small pieces.

Finely chop a selection of colored peppers (about 2 cups)
I used The small Italian sweet ones.

Finely chop one large onion.

A tbsp of mint.

One jalapeño finely minced….to add that extra kick!

For the dressing…
1 cup vinegar
1 cup Extra virgin Olive Oil
3/4 cup sugar (or less, depending on the sweetness of the fruits)
1 tsp paprika
1/2 tsp all spice
A dash of salt
Juice of 1 large lemon

Mix all the ingredients, and whisk to combine.

Bringing it all together…
Transfer the fruit and peppers to a large bowl.

Add the chopped onions, jalapeño and mint to the mix.
Drizzle dressing over it all….

Toss to combine.

Chill in refrigerator for atleast a couple of hours…for flavors to infuse. Serve chilled with tortilla chips!
