Veg Cheese Quesadillas

Irresistably delicious Mexican whole wheat Quesadillas filled with flavorful veggies and melting cheese.

Best of all they are made with the lightest spray if oil…so its the perfect anytime healthy indulgence!

You will need:
4 large Whole wheat tortillas/rotis
1 finely chopped onion
3/4 cup finely chopped colorful peppers
314 cup finely chopped mushrooms
1/2 cup shredded cheese
1 Jalapeno finely chopped
1/2 tsp oregano
1 tbsp finely chopped cilantro

Method:
Heat 2 tsp oil. Gently saute chopped onions and Jalapeno for 2 minutes.

Follow with mushrooms. Cook on medium high for another minute.

Add the peppers and cook for a minute.

Add oregano and salt to taste.
Cook on high heat for another minute…your filling is ready.
Keep aside in a bowl to cool slightly for 5 minutes.

Now, spread a generous layer of the above filling on 1 tortilla/roti

Top with a light sprinkle of grated cheese and chopped cilantro.

Cover with another tortilla/roti

Cook on a hot pan on medium heat…

using the lightest spray of oil till crisp.

Transfer to cutting board

Cut into wedges and serve warm with your fav hot sauce.

Useful Tip:
You can use any leftover sabzi of your choice…pair it with cheese/paneer and you have an instant delicious filling, ready.
Below, Ive used alu methi ki sabzi…

along with grated paneer as quesadilla filling.

In addition, I also used just enough cheese as is needed to stick the 2 tortillas together.
In no time…you have a yummy healthy make-over using ready stuff you already have in your fridge!
