Veggie Burger Workshop!

A Fun Burger workshop…..three different ways!
Hubby likes Deep fried,
I like Pan fried,
Mom likes Indian style! What’s your pick?

Vegetarian burgers…..recipe for burger patties from mom.
Soak Kala chana overnight. Pressure cook with salt till soft. Grind to a smooth paste and combine with equal quantity of mashed potato.

Add finely chopped onions, minced ginger & garlic, finely chopped green chillies and cilantro.

Add a generous quantity of bread crumbs. I recommend Panko bread crumbs, if you can get them.

Add salt, red chilli pwdr, dhania pwdr, smchoor and garam masala as per your taste.

Check consistancy of mix, it should not be too loose. If required add more bed crumbs.

Form into big round patties and deep fry/pan fry…one at a time!

Do not over crowd your frying pan, these cutlets crumble and break easily. So do exercise caution while frying them.


Split buns, spray with oil and grill. Place some lettuce followed by coleslaw on the base of each bun, top with patties. Cover with top of bun and serve immediately!

PS: Mom’s style: skip coleslaw….serve toasted buns layered with patties, spicy green chutney and pyaz!!

For low fat mustard coleslaw

Add a sprinkling of salt to shredded cabbage, grated carrot and finely chopped celery (optional)

After 20 minutes squeeze vegetables to extract away as much water as you can.

Now add Greek/hung yoghurt, a little mayo/cream, mustard, vinegar, a touch of sugar, salt & pepper to taste.

Mix nicely, taste and adjust seasoning as.per your taste….Serve chilled.

  1. Hi ruchi, I am in love with your recipes and the way you write about them,telling about how different people in the family want in a particular style. Noting down in my diary the ones I find interesting. I make these kale chaney kebabs to the same way, don’t add alu at all.I.add chopped mint leaves in the kebabs aswell. I will surely try this burger style.

  2. Hi Ruchi, I made these burgers today. Just added a bit of chaat masala to enhance the flavour. Deep fried it but had it absolutely Indian style with mint chutney, onions and mirchi, just like your mom. 🙂 Absolutely delicious. No complaints from a 3 year old who had mini burgers. (She calls them ‘tikkinis’). Thank you!!
