Veggie Cutlets

‘Train-style’ veggie cutlets have a nostalgic appeal for many of us. They take us back to Indian train rides and the delicious snacks we enjoyed on them. These beetroot and vegetable cutlets were sold by the train vendors and years later they still continue to hold their special appeal!

To make them I used…

4 small boiled, peeled and mashed potatoes

1 beetroot finely shredded

1/2 cup shredded cabbage

1/2 cup shredded carrot

1/2 cup shredded cauliflower

1/2 cup shredded capsicum

1 medium onion finely chopped

1/2 inch ginger, grated

2 cloves of minced garlic

4-5 green chillies finely sliced

Some freshly chopped dhania

1 tsp amchoor

1/2 tsp red chilli pwdr

1/4 tsp garam masala

Salt to taste

Fresh bread crumbs as needed (about 4-5 slices)

Combine all the above ingredients into a smooth cohesive mix and form into flat round patties.

Fry on medium high heat till deep golden. Rest on a paper towel and serve warm with tomato ketchup.

Note:

You can use these cutlets for burgers/sliders.

To make them…

Grill bun/pau in oven.

Spread coleslaw generously over bottom half

Top with veggie cutlet. Close with top half…enjoy!!
