The Aromatic Festive Rice Classic from Spain!
A Spicy Medely of Mussels, Shrimp, Chorizo, Chicken, Vegetables and Rice….. simmered in a delicious saffron infused chicken broth, yum yum yum!!
Cut boneless chicken into small pieces, sprinkle lightly with Cajun seasoning. Sear on hot pan along with cured chorizo sausage (whole, do not slice at this stage) for about 5 minutes keep aside covered. Next sear shrimp sprinkled with Cajun seasoning, and keep aside covered….take care not to over cook.
Now sauté finely chopped onions, red peppers, garlic and Jalapeños till translucent. Add a little chopped tomato and French beans (cut into 1 inch pieces) and cook till tomatoes melt. Now add washed and drained rice, salt, chicken stock, white wine, water, bay leaf, thyme, saffron, chorizo (slice thinly before adding) & chicken. Bring to boil, reduce flame and cook covered for 20 minutes. Now tuck in scrubbed and cleaned mussels (take care to see that they are all firmly closed) Cover & cook for 5 minutes. Now stir in the shrimp, cover and cook for another 5 minutes.
