Zucchini Pasta / Noodles

image Irresistable Delicious Zucchini Noodles that look, feel and taste like real pasta…it’s almost magical!
You can enjoy your fav pasta creations, guilt-free…at a fraction of the calories!

You will need…

Veg Noodles from 2 medium size zucchinis
4-5 medium tomatoes (depending on size,I used small Campari tomatoes so I used 6-7)
3-4 cloves of garlic fine
Y chopped.
1/2 tsp Oregano
A tbsp of chopped basil (I used my frozen cube)
1 tsp crushed red pepper
Salt n black pepper to taste.

Method:
Use your Veggetti or any other make of spiralizer to make thick noodles from raw zucchini. No need to peel zucchini either.

My Vegetti has two settings. Thin and and thick, but I prefer the thicker setting for making pasta.
Next stew tomatoes in microwave for 2-3 minutes. Cool slightly. Remove outer peel. Use your chopper to Purée them along with the basil.

Heat 2 tsp of olive oil, add garlic and cook for 2 minutes.

Add the tomato basil purée along with the salt, crushed red pepper, oregano and a sprinkle of freshly cracked black pepper. Cook to reduce till slightly thick and the raw taste of the tomato disappears.

Add the raw zucchini noodles, to the tomato sauce…

and mix to combine.

cook on very high heat for not more than 2-3 minutes till the noodles just start to soften. Be careful to not over-cook, remember it’s a vegetable that only looks like pasta! 🙂

Transfer to serving plate. Sprinkle with some freshly grated Parmesan cheese if you like..serve immediately!
