Air-Fryer Gobhi Munchurian

Who can resist Gobhi Munchurian, crunchy fried gobhi tossed in a delicious sauce that’s sweet n sour n spicy, an absolute party in your mouth!

But Deep fried gobhi absorbs insane amount if oil, so uptill now it was difficult to indulge in this family fav too often.

But using the air fryer to make it proved to be a complete game changer!

Initially I was a little weary about trying it in the air-fryer. I was concerned about whether the gobhi would retain its crunchiness and not become soft n mushy.

But to my surprise…the air-fried gobhi Munchurian was quite a grand success!

Here’s how I made it…

You will need:

1 medium size cauliflower cut into medium size pieces

1/2 cup all purpose flour

1/4 cup cornstarch

2 tbsp rice flour

2 tbsp soy sauce

1 tbsp vinegar

2 tsp chilli sauce

Salt to taste

1 tbsp cooking oil

Method:

Toss all the above ingredients together along with a generous sprinkle of water to coat the gobhi evenly.
Line air fryer with foil.

Spray foil with oil and place coated gobhi pieces in a single layer. Preheat air fryer at 390F for 5 min.

Cook for 10-12 minutes. Take out air fryer basket and remove the cooked gobhi.

Continue to cook all the gobhi in batches for 10-12 min for each batch.

At this stage gobhi is only semi-cooked and you just want the outer layer to dry out.

Next remove foil from air fryer basket.

Transfer all the cooked gobhi pieces back to the basket and cook for another 10-l2 minutes till the gobhi florets become crispy and fully cooked, tossing florets midway for even cooking.

Remove from air-fryer basket and keep aside.

For the sauce:

Heat 2 tsp oil, add 2 tsp ginger garlic paste, 1 bunch of chopped scallion/spring onion and cook for 2 minutes. Add red/green bell pepper and cook for another 2 min. Add 1/2 cup water and bring to a quick boil. Add 1 tbsp soy sauce, 2 tsp vinegar, 1 tsp chilli sauce, 1 tsp sugar and salt to taste.

Mix 1 heaped tbsp of cornstarch in 1/4 cup of water and add to the sauce. Cook for 2-3 minutes till sauce becomes thick n glossy.

Add the air-fried gobhi and toss to coat evenly… cooking on high heat for minimal time.

Once ready, serve immediately!
