A little time consuming to make, but then…good things in life don’t come easy! One taste and you’ll know it’s completely worth the extra effort!

Method:
Dice 2 potatoes and a small cauliflower into slightly big pieces.
Deep fry potatoes on medium heat till golden.
Deep fry cauliflower on medium high heat till lightly golden too.
After frying the vegetables should be cooked through, but still slightly firm. They should hold their shape and not be mushy.
Now heat a pan with 2 tsp oil. Add a tsp of jeera, followed by 1 tsp chopped garlic and 1 inch of thickly julienned ginger. Cook for a minute.
Add 2 med finely chopped onions. Cook till lightly golden.
Add 3 small tomatoes (puréed) along with 1 tsp red chili pwdr, 1/2 tsp haldi and 1/2 tsp dhania pwdr.
Cook to reduce juices. Also add some sliced green chillies (optional)
Cook the masala till it turns a rich deep red.
Now add the fried potatoes and cauliflower.
Cook on med high tossing lightly, making sure the masala coats all pieces evenly. Taste and adjust for salt if needed.
Sprinkle lightly with garam masala and garnish with freshly chopped dhania….ready!
