Alu Palak ki Sabzi

imageIron-rich Spinach cooked minimally to maintain color, flavor and nutrition….along with some potatoes to make one delicious healthy sabzi! Try making it this way, you will love it!

Method:
You will need…


2 large potatoes peeled and diced. Immerse in water to prevent browning.
1 1/2 cup blanched spinach minced.
1 small onion finely chopped (optional)
2 tsp ginger green chili minced
2-3 cloves of garlic chopped (optional)
2-3 whole red chillii
1/2 tsp red chili pwdr
1/2 tsp dhania pwdr
1/2 tsp haldi
1 tsp jeera
Salt to taste.
Heat oil, add jeera and follow with chopped garlic and whole red chillies. Cook for a minute.

Add the minced ginger and green chilli, cook for another minute.

Add the chopped onions. Cook for 2-3 minutes till they become translucent.

Add the diced potatoes along with the salt, haldi, red chili pwdr, dhania pwdr. Stir to combine and cook for 2-3 minutes.

Now add a sprinkling of water, cover and cook for 8-10 minutes…till cooked through.

Insert a knife to check that the potatoes are cooked.

Now add the blanched minced spinach.

Cook on medium high, for 3-4 minutes.
Check seasoning and adjust salt n spices….if required.
At this stage, if you like add a tsp of ghee….lends wonderful aroma and flavor to the dish.

Serve warm with Dal-Roti-Chawal!

For blanching the spinach….

Wash and drain spinach leaves.
Microwave on high for 2-3 minutes.
Alternatively immerse in boiling hot water for 2-3 minutes.
Transfer spinach to a bowl filled with ice water.
Once cool drain and use as needed.
