One of my fav Indian Chinese dishes is melt in the mouth fork tender fish in a glossy brown sauce with julienned ginger and sliced green chillies….Mmmmm need I say more! 🙂
Best part is that it is so quick n easy….it takes just 20 minutes to put it together from start to finish!
Method:
Cut 1 lb fish (any mild flavored white fish) into 2 inch pieces. If using Paneer cut into 1 inch pieces.
Toss the fish/paneer in 2 tbsp soy sauce, 1 tbsp vinegar, salt and red chilli powder to taste and 2 tbsp cornstarch.
Marinate fish for 15 minutes.
Sear on a hot pan, a couple of minutes on each side.
Add brown sauce and Simmer for 2-3 minutes. Garnish with chopped scallions…ready.
Serve with hot brown/white rice!
For the brown sauce…
Heat oil, add 1 tsp chopped garlic followed by 1 inch thinly sliced ginger and 1 small diced onion. Cook for 2 minutes.
Now add 1 small diced capsicum along with 4-5 sliced green chillies. Cook for 2 minutes.
Now add about 3/4 cup water and bring it to a slow simmer.
Add the cornflour solution (made with a mix of 1/4 cup water, 1 tbsp cornstarch, 1 tbsp soy sauce and 2 tsp vinegar) salt to taste and about 1/2 a tsp of sugar.
Simmer for 2 minutes till glossy.
