Cucumber & Cottage Cheese between Sprouted Multigrain bread…..make for a real ‘Feel Good’ Sandwich!!

Method:
Slice cucumbers. Season cottage cheese with salt, pepper and some chopped parsley. Layer between slices of multigrain/brown bread. Chill and serve!
Note: if using paneer instead of cottage cheese, make sure to use fresh homemade paneer and blend it with a couple of tablespoons of milk to get a spread like consistency.
