Fish in Garlic Browned Butter

Melt in the mouth buttery garlicky fish served with a tangy delicate salad of baby green pea shoots…Mmmm one bite….and you are sure to be hopelessly hooked 🙂

Method:
Marinate fish fillets (I like to use Tilapia) in salt, pepper and lemon juice.

Heat 2 tbsp butter and add 6-7 cloves of sliced garlic.

Cook on medium low till, garlic browns to golden. Remove garlic and keep aside. Also reserve the garlic flavored browned butter.

Now dredge marinated fish lightly in seasoned flour.

Cook fish for 3-4 minutes in the garlic flavored browned butter. Flip and cook for another 2 minutes till done.

Make a quick tangy dressing by whisking together 3 tbsp extra virgin olive oil, 2 tbsp white wine vinegar/or any other vinegar you have, 1 tbsp honey, 1 tbsp brown mustard and salt n pepper to taste. Toss pea shoots, cucumber and radish in this honey mustard dressing.

The salad makes a delicious accompaniment to the fish.

Arrange some pea shoots as a bed on the serving platter.

Top with the cooked fish. Garnish with lemon wedges.

Sprinkle fish with the reserved browned garlic bits and serve along with the pea shoots salad….you can also drizzle some of the tangy salad dressing on the fish if you like! 🙂
