Ande ki Bhurji with a Healthy Twist!

Heat oil in a pan, add finely chopped onions & green chillies, Sauté lightly for a couple of minutes and add a cupful of grated cauliflower, salt, pepper and a little haldi. Stir fry on high heat for 3-4 mins tossing continuously. Now add 3 beaten eggs and stir lightly till the egg coagulates. Garnish with chopped dhania! This is a great recipe for fussy kids who do not eat their veggies and also for the time when you do not have enough eggs for a bhurji. Believe me no one comes even close to knowing that there is cauliflower in the recipe and it tastes fantastic!
