My Hearty Winter Vegetable Stew is to die for good!!
This wholesome stew uses my recipe for the Simple Tomato Soup as a base and is rich in nutrition & flavor…a family fav that you will want to make again n again!!
Method:
For the base…
Pressure cook about 300 gms yellow/white onions along with about 1kg Campari/ Desi (read good sour) tomatoes and a little water for 5-6 whistles. Purée, strain and add salt n pepper to taste.
For the vegetables in the stew…
Finely chop vegetables like, beans, cauliflower, carrot, peppers, spring onion etc
Heat some butter add a couple of cloves of minced garlic. Follow with the vegetables and gently sauté for 2-3 minutes. Take care not to over cook the vegetables, they should still retain a slight bite.
Add the tomato soup and bring to boil.
Alternatively, if you want to make a lighter version, you can steam vegetables in the microwave and then add it to the tomato soup.
Add about a cup of milk (the soup will turn a beautiful peach) and brng to boil.
Adjust salt n pepper to taste…ready!!
This soup with hot buttered toast…makes a great meal option for a simple week night dinner! 🙂
