Irresistibly yumm….you won’t be able to stop at one!
Karela at it’s absolute indulgent best!!
Caution: Be sure to make a big batch….
or like me, you’ll run out of them before you’ve had your fill 🙂
Method:
Lightly scrape karelas, reserve scrapings and salt them.
Slit them lengthwise and apply salt inside out.
Keep aside karelas and scrapings for about an hour.
Rinse, pat dry and deep fry karelas in hit oil on high heat…
till golden crisp.
Carefully tip each karela to drain as much oil as possible and transfer to paper towel.
Finely chop onions and sauté them in some leftover karela oil (for added flavor) and the salted scrapings till they start acquiring some color.
Add salt, red chilli pwdr, coarsely pounded saunf, amchoor powder and garam masala and cook till masala turns deep golden.
Fill the fried karelas with the stuffing…
Making sure to divide filling evenly between all the karelas!
Serve with yellow dal and phulka/roti!
