Quick simple no fail recipe for Kadhai Chicken that you will absolutely love!

when you want to serve it with roti/rice as an entree, make it with a light gravy.
It also makes a finger-licking appetizer, just make it slightly dry and give an interesting achari twist by adding a little mustard oil and 1/4 tsp each of methi, saunf and kalonji along with the garlic at the first step of cooking!
Method:
Heat ghee+oil, add about 900 gms bone-in chicken along with 3-4 cloves of minced garlic and salt to taste.
Cook on medium high till well browned and almost cooked through.
Add 350 gms chopped tomatoes, 6-7 slit green chillies and 1 inch thinly sliced ginger. Also add 1 tsp of red chilli pwdr, 1 tsp coarsely pounded roasted dhania seeds. Cook on medium high.
Also, in a separate pan, lightly sauté 1 small diced onion and 1 small capsicum, keep aside.
Once tomatoes melt, add the sautéed onions and peppers to the chicken and cook for another 5-6 min. Finish with a final sprinkle of garam masala and some freshly chopped dhania!
Serve hot!
