A delicious rustic take on pakoris. You can enjoy them as a crunchy snack with a cup of tea…
or dip them in dahi to enjoy dahi pakoris. Either way they are a great addition to your Vrat thali!
These pakoris are a little tricky to make, but with mom’s tips…you’re sure to get them right! The fried pakoris are so tasty, they are usually half gone even before they have the chance to be dipped in dahi!
Method:
Boil and mash 1 large potato. Mix with 3/4 cup Kuttu ka atta to make a thick paste. Now using your hand, whip this paste for a good 3-4 minutes. Add salt, red chilli pwdr, chopped dhania and green chillies to the Kuttu paste. Let it rest for 15-20 minutes. Now whip again for another 3-4 minutes…the Kuttu paste must become light and airy….resembling dahi-vada batter.
Now heat oil in karhai and drop small pakoris into the oil.
Fry on medium heat till they turn a deep golden brown. Do not rush to take them out….or they will tend to be raw from inside.
If you like you can enjoy them hot with spicy green chutney
Or once they are slightly cool, drop them in chilled whipped salted dahi. Sprinkle with red chilli pwdr and roasted jeera pwdr….enjoy!
