Method:
Gently sauté onions and green chillies till translucent, keep aside.
Beat 2 eggs to blend yolks, add salt n pepper.
Heat a tsp of butter/oil. Pour the beaten egg.
Cook for a minute.
Spread a generous layer of fresh crumbly paneer (preferably homemade) in the middle. Top with the sautéed onions. Sprinkle some cilantro and salt n pepper on the paneer.
Fold omelette…flip and cook till paneer is heated
