Use it over any kind of meat, fish or even tofu…your kids will especially love this. 🙂
You will need…
1 large ripe sweet mango, peeled and cut into pieces.
1 cup white vinegar
1/2 cup sugar
1 whole pod of roasted garlic and 1 large jalapeño roasted
1 large tbsp grated ginger (or more)
3-4 whole red chillies,1 tsp black pepper, 1 large cinnamon, 2 star anise, 1 tsp of fennel and a large lemon size ball of tamarind
Salt to taste.
Method:
Pour the vinegar to a heavy bottomed pan.
Follow with sugar,
the grated ginger,
the spices,
the tamarind,
the finely chopped roasted garlic and chillies,
And finally the chopped mangoes.
Cook on low heat till the tamarind and mangoes melt and the mix thickens and becomes glossy.
Remove the stick of cinnamon and the star anise and discard Transfer the remaining mix to a blender.
Grind into a fine paste.
Strain the paste to remove all pulp to get a smooth sauce.
Add salt to taste to the strained sauce.
Store in an air tight container and keep refrigerated.
Use for basting grilled tofu or shrimp
Or even fish or chicken wings….it’s delicious!!
