Prepping the ingredients…
Make Idli batter according to the recipe link below.

Make alu ki stuffing according to the recipe link below.

Assembling the idlis…
Grease Idli moulds. Fill half way with Idli batter.
Place a flat ball of mashed alu filling in the middle. Sprinkle with finely chopped chillies if you like.
Top with some more Idli batter to cover filling completely.
Use your finger to press in any filling/chillies that happen to peep out.
Place Idli mould in hot steamer. Steam for 10 min.
Take out of steamer, air dry for another 3-4 minutes.
Lift idlis gently out.
Slice n serve along with coconut chutney!
