Stuffed Mexican Roti/Paranthas

Quesadilla inspired fusion Roti/Paranthas!

They are made with a rich avocado dough and then stuffed with tangy salsa n cheese….simply irresistible!

Make them as a mid-week surprise for your kids…they will jump with joy, at the delicious treat!!


Method:
To make the dough…

Make a flavored dough using ripe avocado, minced garlic, minced Jalapeño, finely chopped onions, salt, red chili pwdr, chopped cilantro and a sprinkling of shredded cheese. You can also make the dough using water instead, if avocados are not available.

Divide dough into small lemon size balls.

To make the filling…
Cook store bought chunky salsa…

till it reduces to become a thick paste.

Add a little sugar to balance flavors from the reduction.

Rolling out the roti/Parantha…
To make 1 stuffed roti…you will need 2 such balls of dough.
Roll each ball out into a thin circle.

Now on one circle, spread a thin layer of salsa filling.

Sprinkle some grated cheese (I used Mexican blend)

Top with the other circle of dough.

Press across outer edges with your finger tips to seal.

Using your fingers….pat to flatten.

Then use a rolling pin to roll it into a thin roti. Be careful to not tear the dough while rolling..or the filling might spill out!

Cooking the roti/Parantha…
Transfer roti to hot Tawa.

Cook till golden. I did not use any oil to cook these, as the rich natural oils from the avocado (used to make the dough) were sufficient to roast the rotis. However if you are not using avocado in the dough, use a few drops of oil, to cook the rotis.

Serve these stuffed roti/paranthas while still warm….they taste best while the cheese is warm and melty.

However if you need to make them ahead and store…they reheat quite easily in your toaster. Just cut them into half.

Stick them into your toaster to reheat.

Ready to serve…

Warm, melty, cheesy….yum yum!
