Apple ki Fruit Biryani!

imagePresenting a delightful fruity take on meethe chawal! My Desi interpretation to the classic flavors of Apple pie, it is tangy, sweet with a hint of spice.
Make it for those cold winters evenings…when you are in a mood to pamper yourself and your loved ones! 🙂

Method:

For preparation…
Soak rice for 20 minutes drain.
Heat ghee, add green cardamom and laung, rice and cook for a minute. Add 1 1/2 times water and cook covered on low heat.
Meanwhile, finely slice apple using a vegetable peeler, squeeze some lemon juice to avoid discoloration. Next cook the apple with brown sugar (or gur), cinnamon, smoked paprika, ground ginger and reduce to a thick sauce.
Warm 1/2 cup milk with sliced almonds and pistachios, raisins & kesar/rose essence.
When the water in the rice evaporates almost completely, take out in a flat dish and air for 5 minutes.

To assemble…
Take a dekhchi with a heavy base. Spread ghee on all sides. Spread layers of rice, apple mix, milk n nuts and some brown sugar (or gur). Also squeeze lemon juice between each layer. Put Dekhchi on heated tava, cover with a heavy lid and put on very low heat for 30 minutes.
Serve garnished with sliced almonds and pistachios!
