Fiery Gunpowder Baingan

Fiery Gunpowder Baingan, a spicy tangy treat for the senses, that will bowl you over!
It’s every bit worth the effort you will put into making them.
The complex blend of spices, come together beautifully, this recipe is a must try for all lovers of spicy food!

I suggest you make a big batch, for you will want to eat them in the next meal too, they are so irresistibly good! 🙂

Method:
For the Spice mix

2 tsp Coriander Seeds
1 tsp oil
2 tsp toor dal
1 tsp pepper
2 red dry chillis
½ tsp cumin seeds
Roast the above spices

and powder in a dry grinder

For the gunpowder…
You can use store bought
Or use my simple Recipe for homemade Gunpowder

Prepping the baingan…
Next wash and slit small mini baingan, applying cross sectional cuts.

Now add mix the spice powder with the gunpowder in the ratio of 1:2. So if you use 1 tbsp of spice mix, add 2 tbsp of Gunpowder to it. Also add a few curry leaves to it.

You can add dry curry leaves crushed with your hand or fresh chopped up.

Some salt

and some oil to make a thick paste.

Now your stuffing for the baingan is ready too use.

Stuff this mix into the slit baingan.

Be liberal with the stuffing.

Cooking the Baingan…
Heat a tbsp of oil and cook the baingan, turning sides, intermittently till they are soft and coked through.

Only after they are completely cooked, add a couple of tsp of tamarind paste

and a light sprinkle of sugar to balance the acidity from the tamarind. Be careful not to add too much sugar, as it will make the baingan sweet and that is not the intention here!

Cook till completely dry, shiny and crisp ….serve with hot dal/Chawal!
